Ingredients (4 servings)

4 large zucchinis

1 can of black beans

1 can of corn

2 medium tomatoes, diced

1 cup chopped onions

1 cup diced bell peppers

1 cup mozzarella cheese

1/2 cilantro bunch




  1. Pre-heat oven to 400F
  2. Slice zucchini in half (lengthwise)
  3. Remove de center with a spoon, leaving the zucchini boat-shaped. Place the “boats” in a deep baking pan.
  4. Mix all the ingredients in a bowl (leave 1/2 cup of cheese aside) and fill the zucchini with the mixture.
  5. Sprinkle cheese on top of the zucchini.
  6. Bake for 15 minutes
  7. Enjoy!
