Egg Muffins
Ingredients (2 servings)
4 large eggs
1/3 cup diced bell peppers
1/3 cup chopped mushrooms
1/3 cup chopped scallions
1/3 cup sweet corn
1/2 cup chopped broccoli
1/2 cup mozzarella cheese
Salt
Pepper
Directions:
- Pre-heat oven to 375F
- In a medium bowl mix bell peppers, mushrooms, broccoli, scallions, corn and cheese. Divide into muffin cups (filling about halfway).
- In a large bowl whisk eggs, salt and pepper.
- Pour egg mixture into muffin cups.
- Bake for 15-20 minutes and serve.
