INGREDIENTS:

2 (cans) Garbanzo Beans

1 (can) Corn

1 (can) Sweet Peas

2 (cups) Quinoa

4 (cups) Water

1 bunch fresh Parsley

2 medium Tomatoes

1 medium Carrot

1 medium Onion

2 Garlic Cloves

Salt & Pepper

 

DIRECTIONS: 

  1. Rinse quinoa in a fine-mesh sieve with cold water.
  2. Pour quinoa along with water in a medium saucepan over medium-high heat and season with salt. Bring to a simmer and cook covered for 15-20 minutes until the liquid is absorbed. Remove from heat and allow quinoa to sit covered for 5 minutes. Fluff the quinoa and serve.
  3. While waiting for the quinoa to cook, saute onions, garlic, garbanzo beans, and carrots for 5 minutes. Add remaining vegetables and cook for 3 minutes.
  4. Mix quinoa with vegetables and add seasoning. Serve.
