Bean and Veggie Burrito Bowl

 

Ingredients:

½ can Garbanzo Beans (drained and rinsed)

4 oz Mixed Vegetables Frozen Bag

½ Boniato (diced and roasted)

1 clove Garlic (minced)

1/2 teaspoon Curry Seasoning

Salt and pepper to taste

 

Instructions:

Roast the diced boniato by tossing with olive oil, salt, and pepper, and baking at 400°F (200°C) for about 25-30 minutes.

Heat the mixed vegetables and garbanzo beans in a pan with the minced garlic and curry seasoning until everything is warm and slightly browned.

Assemble the burrito bowl by layering the roasted boniato, garbanzo beans, and mixed vegetables.

Serve alone or over rice. Optionally, top with avocado or a squeeze of lime.
