Ready in: 20 minutes Serves: 4
This zesty, wholesome salad is powered by garlic and Dijon mustard—quick to make, delicious to share.
🧄 Ingredients
- 15 oz can lentils, drained & rinsed
- 2 carrots, chopped
- ½ onion, chopped
- 2 cloves garlic, minced
- ½ tbsp vinegar (red wine, white wine, or cider work best)
- 1 tbsp Dijon mustard (optional)
- 1 tsp dried thyme
- 1 tbsp olive oil
- Salt and pepper to taste
🍳 You’ll Need
Sharp knife • Can opener • Large skillet • Spatula or spoon
👨🍳 Instructions
- Heat oil in a skillet over medium heat.
- Sauté carrots, onion, salt, and pepper until softened (5–8 mins).
- Stir in garlic and thyme; cook 1 more minute.
- Add lentils, vinegar, and mustard; warm through (about 3 mins).
