Poverello Eat Well Center Welcomes Registered Dietitian/Licensed Nutritionist Marcia Saint Victor
Poverello Eat Well Center is proud to announce the addition of Registered Dietitian/Licensed Nutritionist Marcia Saint Victor to its team. Marcia has a wealth of experience in nutrition counseling and education, and she is passionate about helping people eat well to improve their health and well-being.
At Poverello Eat Well Center, Marcia will be providing free nutrition assessments and counseling, as well as leading healthy cooking classes. Her recipes are based on the 117 different healthy food items that Poverello offers, so you can always count on finding a new and delicious meal to try.
Marcia is excited to be a part of the Poverello team and to help the community eat well. She believes that everyone deserves access to healthy food and nutrition information, and she is committed to making a difference in the lives of her clients.

Ratatouille
Ingredients
1 (15oz) can diced tomato
1 medium eggplant (sliced)
2 medium zucchini (sliced)
4 tomatoes (sliced)
1 onion (chopped)
3 garlic cloves (minced)
3 tablespoons olive oil
2 tablespoons thyme
2 tablespoons rosemary
Salt & Pepper
*Optional: Parmesan cheese to garnish
Directions:
- Pre-heat oven to 400F
- Cook onion and 3/4 of garlic in 1 tablespoon olive oil over medium heat until tender.
- Add diced tomatoes and seasoning, let simmer for 15 minutes. Taste and adjust seasoning.
- Cut vegetables to 1/8″ thickness.
- Pour tomato sauce to baking dish. Arrange vegetables on top of sauce by standing them up on their sides.
- Create mixture with remaining olive oil, garlic and seasoning. Brush evenly on top of vegetables.
- Cover and bake for 25 minutes. Uncover and bake additional 10 minutes.
- Optional: add parmesan cheese to garnish.
- Enjoy!
Mexican Zucchini Boats
Ingredients (4 servings)
4 large zucchinis
1 can of black beans
1 can of corn
2 medium tomatoes, diced
1 cup chopped onions
1 cup diced bell peppers
1 cup mozzarella cheese
1/2 cilantro bunch
Salt
Pepper
Directions:
- Pre-heat oven to 400F
- Slice zucchini in half (lengthwise)
- Remove de center with a spoon, leaving the zucchini boat-shaped. Place the “boats” in a deep baking pan.
- Mix all the ingredients in a bowl (leave 1/2 cup of cheese aside) and fill the zucchini with the mixture.
- Sprinkle cheese on top of the zucchini.
- Bake for 15 minutes
- Enjoy!
Butternut Squash & Potato Gratin
Ingredients (4 servings)
2 medium butternut squash
6 medium potatoes
1 ½ cups mozzarella cheese
1 cup parmesan cheese
6 tbsp butter
6 tbsp flour
3 ¾ cups milk, heated.
3 tbsp thyme
Salt
Pepper
Directions
- Pre-heat oven to 425F
- Peel butternut squash and potatoes. Remove butternut squash seeds and cut both vegetables into ¼ inch thick slices. Set aside.
- Bechamel Sauce (3 cups):
- Melt the butter in a heavy-bottomed saucepan. Stir in the flour and cook, stirring constantly, until the paste cooks and bubbles a bit, but don’t let it brown — about 2 minutes.
- Add the hot milk, continuing to stir as the sauce thickens. Bring it to a boil.
- Add salt and pepper to taste, lower the heat, and cook, stirring for 2 to 3 minutes more.
- Remove from the heat.
- On a baking pan add a layer of butternut squash, potatoes, bechamel sauce, mozzarella, parmesan cheese, ½ tbsp thyme, and a dash of salt and pepper. Repeat until all ingredients are used.
- Place pan in the middle or lower rack of the oven and let it cook for approx. 40 minutes or until vegetables are soft.
- Add more thyme to garnish and serve.
